Malva Pudding – Best Holiday Dessert EVER!

In our previous blog post, we asked you to share your best holiday dessert with us, including a story that goes with it. So here’s mine…

I’ve been eating Malva Pudding every Sunday since I could eat. It’s my dad’s favourite and he will probably ask for it every Sunday until the day he’s no longer with us. Malva Pudding has become such a part of our family that every time someone speaks of it, I think of my dad.

1 cup sugar

1 egg

1 tbsp apricot jam

1 cup flour

1 tsp bicarbonate of soda

A pinch of salt

1 tbsp butter

1 tsp vinegar

1 cup milk


1 cup cream

125g (4 oz) butter

1 cup sugar

1/2 cup hot water


Beat the egg and sugar well in a mixer.

Add the jam.

Sift the flour, bicarbonate of soda and salt together.

Melt the butter and add the vinegar.

Add the liquids to the egg mixture alternately with the flour.

Beat well and bake in a covered dish at 180°C (350° F) for 45 minutes to an hour.

Melt the ingredients for the sauce together and pour it over the pudding as it comes out of the oven.
